Ingredients:

For the Meat Filling:

  • 1 lb (450 g) ground beef (or a mix of beef and pork)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz or 400 g) diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup beef broth

  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 2 tbsp olive oil

For the Ricotta Mixture:

  • 15 oz (425 g) ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup chopped fresh parsley (or 2 tbsp dried parsley)

For the Assembly:

  • 12-15 cannelloni tubes (uncooked)
  • 2 cups marinara sauce (store-bought or homemade)
  • 1-2 cups shredded mozzarella cheese
  • Fresh basil or parsley, for garnish (optional)

Instructions:

  1. Prepare the Meat Filling:

    • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
    • Add the ground beef and cook until browned and cooked through. Drain any excess fat.
    • Stir in the tomato paste and cook for 1 minute. Add the diced tomatoes, beef broth, oregano, basil, salt, and pepper. Bring to a simmer and cook for 10-15 minutes until the sauce has thickened. Let it cool slightly.
